Turkey Chili

Last night I made a very yummy (and healthy) dinner for me and my husband...Turkey Chili in the crock pot. I thought I would share the recipe (my husband loved it and it is definitely a must repeat dinner). So please enjoy:

Crock Pot Turkey Chili 
1.25 lbs of Ground Turkey Breast
1 can Kidney Beans
1 can White Kidney Beans
1 can Whole Tomatoes
1 bag Frozen Corn
1/2 White Onion
Ground Black Pepper 
Garlic Powder
Seasoning Salt
Ground Cumin
Crushed Red Pepper
Chili Powder
Cayenne Red Pepper
1/2 can Water


Brown ground turkey breast in a skillet with EVOO and your white onion. Add seasoning salt and garlic to taste. 


Once meat is ready, transfer into your crock pot with the rest of your ingredients. Use the juice from the tomatoes, but clean the beans before adding to your crock pot. For the seasonings, I estimated on measurements (this is how I usually cook). 


Let cook on low for 6-8 hours then enjoy! 


My husband and I added sour cream and cheese to make it even more yummy :)

First Camping Trip

Well I don't know about you but I spent my holiday weekend doing something I have never done before....I WENT TENT CAMPING!!! 
My husband and I have always talked about camping and our close friends are frequent campers, so when they invited a group of us to join them in Anza Borrego the hubby and I said "Why not?" Well if you know me you know I am more of a hotel, room service kind of girl, but this past weekend I slept in a tent, peed in a hole and went hiking. I had a lot of fun (besides being cold and scared and not sleeping at all the first night because of the howling wind) I must say I would like to go camping again :) We hiked The Slots, visited Borrego Springs visitor center, cooked in the desert, had a run in with a park ranger and spent a nice afternoon in Julian.

Grad Hubby

On December 15, 2011, my handsome husband graduated with his Associate of Science in Electronics Engineering. I am so proud of all his hard work and determination, working full time and going to school while keeping a high GPA which allowed him to graduate with Honors! He will start his Bachelors program in March in order to obtain his degree in Electrical Engineering.

The best news of this accomplishment would have to be his new job at ModusLink! I am so excited!

Our St. Lucian Honeymoon

Well we just returned home from our amazing honeymoon in St. Lucia. We booked a 7 day 6 night vacation at Sandals Grande St. Lucian in the penthouse oceanfront concierge room. The hubby and I had a wonderful time. We drank, ate yummy food, snorkeled, lied around by the pool and beach, made new friends, and took a speed boat tour up the west coast. The resort had fun activities planned and the staff was friendly and accommodating. We definitely relaxed and enjoyed the first glimpse of married life. Here a few pictures for your enjoyment :)
